This Scotch- and applejack-forward flip is ready for the breakfast table thanks to a generous sweetening of maple syrup.
¾ oz. Scotch
¾ oz. applejack
1 oz. oloroso sherry
½ oz. maple syrup
¼ oz. allspice syrup
1 whole egg (pasteurized if you like)
2 dashes Fee Bros. whiskey barrel aged bitters
Tools: shaker, strainer
Garnish: freshly grated cinnamon
Combine all ingredients and shake vigorously, without ice. Fill shaker with ice and shake again until cold. Strain into a sour glass and garnish.
