Yellowbelly’s Zombie Riff

Passion fruit purée and a pomegranate and cherry grenadine take this Zombie riff in an extra-summery direction.

Ingredients

  • 1 oz. white rhum
  • 1/2 oz. gold rhum
  • 1/2 oz. Jamaican rum
  • 1/4 oz. overproof Jamaican rum
  • 1/2 oz. passion fruit purée
  • 1/2 oz. pomegranate and cherry grenadine
  • 1/2 oz. grapefruit juice
  • 1/2 oz. cinnamon syrup
  • 1/2 oz. lime juice
  • 1/18 oz. absinthe
  • Tools:blender
  • Glass:Collins
  • Garnish:mint, lime wheel, grated nutmeg

Preparation

Combine all of the ingredients in a blender with 1 1/2 cups of crushed ice. Blend until smooth. Garnish.

Pomegranate & Cherry Grenadine: Combine 12 oz. of pomegranate juice with 12 oz. of cherry juice and 24 oz. of sugar in a saucepan. Warm and stir until incorporated. Refrigerate for up to 2 weeks.

Cinnamon Syrup: Combine 12 oz. of hot water with 12 oz. of sugar and 10 grams of whole cinnamon in a blender and pulse until smooth. Fine-strain into a bottle a refrigerate for up to 2 weeks.
