Tommy’s Margarita Recipe

Julio Bermejo’s slight twist on the classic has become a modern standard.

From Julio Bermejo of Tommy’s Mexican Restaurant in San Francisco, this slight twist on the classic Margarita is widely considered to be a modern classic. In the recipe, Bermejo removes orange liqueur from the equation, putting the focus of flavor almost entirely on tequila.


  • 2 oz. tequila (blanco or reposado)
  • 3/4 oz. fresh lime juice
  • 3/4 oz. agave syrup
  • Tools:shaker, strainer
  • Glass:rocks
  • Garnish:liime wedge


Combine all ingredients in a shaker and fill with ice. Shake to chill, strain into an ice-filled rocks glass and garnish.

Optional: before preparing the drink, moisten the lip of the glass with a lime wedge and dip in kosher salt.
