Ingredients

  • 1 1⁄2 oz. dark rum (The Merchant Hotel uses Goslings Black Seal)
  • 3⁄4 oz. fresh lime juice
  • ⅓ oz. simple syrup (1:1)
  • 1⁄4 oz. ginger juice
  • 1⁄4 oz. falernum
  • Chilled soda water
  • Tools:shaker, strainer
  • Glass:highball
  • Garnish:lime wedge

Preparation

Shake the first 5 ingredients with ice, then strain into an ice-filled glass and top with soda. Garnish.

Ginger Extract: Press fresh ginger through an electric juicer, then strain the liquid; use immediately.
