Calvados and rum share the bill in this elegant cocktail.

Ripples of baked apple pie flavor weave through this cocktail, thanks to a combination of Calvados, aged rum, and an apple cider reduction.

Ingredients

  • 3/4 oz. Calvados
  • 1/2 oz. aged rum
  • 1 oz. apple cider reduction
  • 1/2 oz. fresh lemon juice
  • egg white (pasteurized, if you like)
  • Glass:coupe
  • Garnish:star anise or dehydrated apple slice

Preparation

Combine all of the ingredients in a shaker with ice. Shake for at least 30 seconds. Strain into a coupe. Garnish.

Cider Reduction: Reduce one pint of fresh apple cider by half. Store in the refrigerator when not in use.
