Connaught Bar Betty Is Back Sparkling Cocktail

A famed London bar creates a celebratory cocktail.

Named for the Connaught Bar‘s head bartender during the 1940s, this sparkler was the first cocktail on the famed bar’s menu when it reopened in 2008. “Betty is Back is a dry, bubbly sip with delicate floral and citrus notes from a complex blend of Aperol … and elderflower liqueurs and fresh lemon juice,” writes Ago Perrone in his book, The Connaught Bar: Recipes and Iconic Creations, “while the Champagne raises a toast to this memorable wartime bartender and her customers, who kept returning to this iconic spot for more.”

Ingredients

  • 1/2 oz. Aperol
  • 1 barspoon elderflower liqueur
  • 1 barspoon fresh lemon juice
  • 3 1/2 oz. Champagne
  • Tools:mixing glass, barspoon
  • Glass:flute
  • Garnish:cocktail cherry

Preparation

Combine all of the ingredients, except the Champagne, in a mixing glass filled with ice and stir until well chilled. Strain into a flute and gently pour in the Champagne. Garnish.
