The Cleanse Cocktail

A garden-fresh sipper.

A rosemary-beet cordial brings richness to whiskey, ginger, and lemon.

  • 1 1/2 oz. rye whiskey
  • 1 oz. rosemary-beet cordial
  • 3/4 oz. fresh lemon juice
  • 1/4 oz. ginger syrup
  • 1 dash Angostura bitters
  • 2 drops saline solution
  • Tools:shaker, strainer
  • Glass:rocks
  • Garnish:lemon twist, mint sprig

Combine all of the ingredients in a shaker with ice and shake to chill. Strain into a rocks glass, top with crushed ice, then garnish.

Rosemary-Beet Cordial: Combine equal parts fresh beet juice and granulated sugar. For every quart of liquid, add 28 grams of rosemary. Reduce on low heat and simmer until the rosemary wilts, about 45 minutes. Remove from heat and let cool. Measure the remaining syrup and add one part orange juice. Shake to combine.

Ginger Syrup: Combine equal parts ginger juice and granulated sugar and stir until the sugar dissolved.
