Accomplice Bar's Take a Hike

LA’s great outdoors celebrated in a spicy mezcal cocktail.

At Accomplice Bar in Los Angeles, a guest visiting from out of town requested a cocktail “that was very Los Angeles.” What Beverage Director Ramsey Musk created was a mezcal cocktail evocative of hitting the trails around the city. “This drink is all about feeling like you’re on a hike in Southern California,” explained Musk. “Smoky, rich, dry, the smell of fresh sage. It’s just a lovely nod to some of the environments that surround Los Angeles.”

Ingredients

  • 1 1/2 oz. mezcal
  • 3/4 oz. fresh lemon juice
  • 1/2 oz. Strega (or yellow chartreuse)
  • 1/2 oz. fino sherry
  • 1/2 oz. chipotle honey
  • 6 sage leaves
  • 1 dash orange bitters
  • 4 drops 20 percent saline solution
  • _______________________
  • Chipotle Honey
  • 200ml honey
  • 100ml water
  • 50g chipotle peppers in adobo sauce
  • 20g fresh sage leaves
  • Tools:shaker, muddler, strainer
  • Glass:Nick & Nora
  • Garnish:sage leaf

Preparation

Slap the sage leaves and tear them up, then put them in a shaker tin. Add the lemon juice and chipotle honey and muddle. Add the rest of the ingredients along with ice and shake vigorously. Strain into a glass. Garnish.

Chipotle HoneyStrain out the chipotle peppers from the adobo sauce and combine all the ingredients in a pot. Break up the chipotle peppers. Heat for 10 minutes but do not boil. Strain.

Saline SolutionMix together 80g water and 20g salt until clear.
