Strawberry Balsamic Margarita

A touch of balsamic balances the sweetness of this seasonal margarita.

Frozen Margaritas are essential to surviving the swelter of Texas, and at Houston’s The Pastry War, the classic formula gets an extra summery twist. “The Margarita’s traditional citrus and tequila flavors are accented by the fresh taste of strawberry, and the fruit’s sweetness is cut by savory balsamic,” says former general manager Sarah Cuneo.

Ingredients

  • 2 1⁄4 oz. blanco tequila
  • 3/4 oz. agave nectar
  • 1 1/2 oz. simple syrup (1:1)
  • 3 1/2 oz. fresh lime juice
  • 2 oz. strawberry-balsamic purée
  • 4 oz. crushed ice
  • Tools:blender
  • Glass:Collins
  • Garnish:half strawberry

Preparation

Blend all of the ingredients until smooth, then pour into a glass and garnish.

Strawberry-Balsamic Purée (makes enough for 4 drinks): Blend 2 oz. of fresh or frozen strawberries with 2 tsp. of balsamic vinegar and 6 oz. of turbinado syrup (2:1). Refrigerate the remainder and use within a day or two.
