Shochu Peach Fizz: A Shochu Sour

Barley shochu with peach puree makes for a summery sour.

Shochu’s fruity aromatics pair perfectly with peaches in this fragrant sipper.


  • 2 oz. shochu (Casa Sensei uses Mizu "Saga Barley")
  • 1/2 oz. fresh lime juice
  • 1/2 oz. peach purée
  • 1/2 oz. simple syrup (1:1)
  • Fresh egg white (pasteurized if you like)
  • Tools:shaker, strainer
  • Glass:coupe
  • Garnish:Peychaud’s bitters


Shake all of the ingredients without ice until foamy, then shake again with ice to chill. Strain into a chilled glass, then garnish with several drops of Peychaud’s bitters on the foam.
