Shaken Hands: An Aperol Cocktail

A playful, tropical take on Audrey Saunders’ modern classic.

For a tropical take on Audrey Saunders’ Intro to Aperol cocktail, Aurele Berdoz, food and beverage director of The Rhymers’ Club in New York City, trades out gin for tequila and introduces ginger and pineapple. Whip shaking the cocktail gives it a delightfully airy texture.

Ingredients

  • 1 oz. blanco tequila
  • 1 oz. Aperol
  • 3/4 oz. fresh lemon juice
  • 3/4 oz. fresh pineapple juice
  • 1/2 oz. ginger syrup
  • 2 dashes Angostura bitters
  • Tools:shaker, strainer
  • Glass:rocks or coupe

Preparation

Combine all of the ingredients in a shaker. Add a small handful of ice and whip shake vigorously to create a light, frothy foam on top. Strain into the glass.
