Bartender Travis Owens uses a locally produced gin and clove-infused syrup to bump up the botanicals and spice in this riff on a classic Gin Fizz.

2 oz. gin
3/4 oz. fresh lemon juice
3/4 oz. clove-infused honey syrup (see below)
1 fresh egg white (pasteurized if you like)
Allspice dram
Tools: shaker, strainer
Glass: coupe
Garnish: 4 drops Angostura bitters

Rinse a coupe with allspice dram and discard any remaining allspice dram from glass. Combine remaining ingredients, except ice, and dry shake for 30 seconds. Add ice and shake again until chilled. Strain into the prepared glass and garnish with the bitters.

Clove-infused Honey Syrup
1 1/2 cups water
1 1/2 cups clover honey
1/8 cup whole cloves
Peel of 1/2 lemon, any white pith removed

Combine all ingredients in a saucepan over medium heat. Bring to a boil, then reduce heat and let simmer for 15 minutes. Transfer to a food-safe container and refrigerate for 24 hours before straining into a glass jar. Will keep for up to 10 days.
