  • ¾ oz. Amontillado sherry
  • ¾ oz. thyme-honey syrup
  • ¼ oz. fresh lemon juice
  • 1 dash Angostura bitters
  • Simple syrup (1:1) to taste
  • Tools:shaker, strainer
  • Glass:punch or coupe
  • Garnish:thyme sprig

Combine the ingredients in a shaker with ice and shake until chilled. Strain into a glass over crushed ice. Garnish.

Thyme-Honey Syrup:
1 cup hot water
1 cup honey
5 sprigs of thyme

Steep the thyme in hot water for 15 minutes. Stir in the honey. Strain the thyme out of mixture, then store in the refrigerator for up to 2 weeks.
