A nutty, earthy take on the Old Fashioned.

At Japanese restaurant Takashi and its neighboring bar Post Office Place, general manager Richard Romney reached for a traditional Japanese tea to create this nutty, earthy Old Fashioned riff. “We love blending Japanese and American flavors and products,” says Romney of this mixture of genmaicha—a toasted brown rice green tea—with Japanese whisky and rye whiskey.


  • 1 oz. Japanese whisky (Romney uses Nikka Coffey Malt)
  • 1 oz. rye whiskey
  • 1⁄4 oz. genmaicha syrup
  • 2 dashes black walnut bitters
  • Tools:barspoon
  • Glass:Old Fashioned
  • Garnish:orange twist


Combine all of the ingredients in a glass and stir briefly. Add a large ice cube and garnish.

Genmaicha Syrup: Bring 1 cup of water to a boil. Remove from the heat and add 1⁄2 cup of cane sugar and stir until dissolved. Let the syrup cool, then add 1 heaping Tbsp. of genmaicha tea (available online or at specialty tea shops) and steep at room temperature for 5 minutes. Strain out the tea and bottle and refrigerate for use within 1 month.
