Honeydew and lemongrass combine with rhum agricole for a sweet, herbaceous refresher.

Morley Field, a reference to the San Diego restaurant’s neighboring Balboa Park, combines rhum agricole with a honeydew lemongrass syrup for an “opposites attract” kind of experience in a summer cocktail, says Trust bar manager Jess Stewart. The syrup’s juicy melon sweetness and herbaceous citrus contrast the rhum’s light, crisp notes, making for what Stewart describes as a more “unique, savory sipper.”

Ingredients

  • 2 oz. rhum agricole blanc (Trust uses Clément)
  • 1 oz. fresh lime juice
  • 1 oz. honeydew lemongrass syrup 
  • Tools:shaker, strainer, blender
  • Glass:rocks
  • Garnish:lime wheel

Preparation

Add all of the ingredients to a shaker with ice. Shake and strain into a glass. Garnish.

Honeydew Lemongrass SyrupIn a blender, blend brewed and cooled lemongrass Tazo tea (2 teabags for every 32 oz of water) and the flesh of a ripe honeydew until puréed. Strain through a fine strainer. Add equal parts sugar and stir to combine. Keep in an airtight container in the refrigerator up to 2 weeks.
