Mint Royalty: A Cucumber Vodka Cocktail

Nick du Mortier always keeps Chicago’s Bar Pendry stocked with lush mint crowns and fresh cucumber juice, so when he wanted to create a refreshing vodka cocktail, he combined the two ingredients with citron vodka, agave syrup, and lemon juice for this Mint Royalty. “It tastes like a dew-laden garden at dawn,” he says.


  • 2 oz. citron vodka (du Mortier uses Grey Goose)
  • 2 oz. cucumber juice
  • 3/4 oz. fresh lemon juice
  • 3/4 oz. agave syrup
  • Tools:shaker, strainer
  • Glass:Belgian-style tulip
  • Garnish:mint, powdered sugar, and candied ginger


Combine all of the ingredients in a shaker with ice. Shake until chilled. Strain into a glass filled with crushed ice. Garnish with a crown of mint, top the mint with a dusting of powdered sugar, and add a slice of candied ginger.
