Mint-Pepper Jelly Collins

Hot pepper jelly offers a little sweet heat to this highball, while fresh mint help to cool things down.

4 large mint leaves, torn in half
1 large barspoon hot pepper jelly
1 1/2 oz. vodka
1/4 oz. fresh lime
Club soda
Tools: shaker, strainer
Glass: Collins
Garnish: fresh mint sprig

Combine all ingredients, except club soda, and shake with ice. Strain into an ice-filled glass, top with soda and garnish.
