Mezcal Negroni Sour

A riff that drinks like a sour but tastes like a Negroni.

Aiming to riff on a mezcal-based Negroni that would taste as bright as it is bittersweet, bartender Paul Mitri uses citrus to put a sour spin on things.

Ingredients

  • 1 oz. mezcal
  • ½ oz. reposado tequila
  • ¾ oz. Byrrh
  • 1 oz. Campari
  • 2 dashes saline solution (1:1 water to Sel Gris)
  • 1 egg white (pasteurized, if you like)
  • ¾ oz. orange juice
  • ½ oz. lemon juice
  • Tools:shaker, strainer
  • Glass:coupe

Preparation

Add all of the ingredients to a shaker and shake (without ice) to combine. Add ice and shake again. Double strain into a chilled coupe.
