This herbaceous cocktail, inspired by the classic Lion’s Tail, brings genever into the spotlight.

Ingredients

  • 1¾ oz. genever
  • ¼ oz. pimento (allspice) dram
  • ¾ oz. rosemary simple syrup
  • ¾ oz. fresh lemon juice
  • 1 fresh egg white (pasteurized, if you like)
  • Tools:shaker, strainer
  • Glass:coupe
  • Garnish:5 drops Angostura bitters

Preparation

In a shaker, combine all of the ingredients and dry shake to emulsify the egg white. Add ice, shake again to chill, then strain into a chilled glass and top with bitters.

Rosemary Syrup: Bring 1 cup of water to a boil. Add 4-5 rosemary sprigs, then turn off the heat. Let steep for 4-5 minutes then add 1 cup of white sugar. Strain, and keep refrigerated when not in use.
