This herbaceous cocktail, inspired by the classic Lion’s Tail, brings genever into the spotlight.
In a shaker, combine all of the ingredients and dry shake to emulsify the egg white. Add ice, shake again to chill, then strain into a chilled glass and top with bitters.
Rosemary SyrupBring 1 cup of water to a boil. Add 4-5 rosemary sprigs, then turn off the heat. Let steep for 4-5 minutes then add 1 cup of white sugar. Strain, and keep refrigerated when not in use.
