Lion’s Tail Cocktail

This classic mix of bourbon, pimento (allspice) dram and citrus won’t bite—it could just be your new favorite whiskey cocktail. “It has everything you love about a whiskey sour (albeit with lime in the place of lemon) and this backbone of allspice and bitters, which come across in the final product as seasonal spices,” says Diner Bar at The Grey bartender Kaleb Craft. At the Savannah bar, they add also take the optional route of adding egg white, to “smooth out some of the edges and add some heft, taking a cue from the more traditional sour.”

2 oz. bourbon
½ oz. pimento (allspice) dram
½ oz. fresh lime juice
1 barspoon rich simple syrup (2:1)
1 dash Angostura bitters
1 fresh egg white (pasteurized, if you like)
Tools: shaker, strainer
Glass: cocktail or coupe

Combine all of the ingredients, shake with ice, then strain into a chilled glass.
