Little Betty’s Smokeshow: A Mezcal Negroni

Negroni Week participant Little Betty’s in Kiama, NSW, Australia, loves a white Negroni. But to lean more into the citrus notes and less into the herbal ones, bar co-owner and drink creator Christina Paterno used Campari in place of Suze in her Smokeshow mezcal Negroni. “Dolin Blanc and Campari work in tandem to highlight the citrus and sweeter caramel flavors of our base spirit, mezcal,” says Paterno. “The edges are softened but using a waterfall ratio, mezcal still remains the star of the show.” The resulting cocktail finishes long, bittersweet, and smoky.

Ingredients

  • 1 oz. mezcal (Paterno uses Ilegal)
  • 1/2 oz. Dolin Blanc
  • 1/4 oz. Campari
  • 3 dashes orange bitters
  • Tools:mixing glass, strainer, barspoon
  • Glass:rocks
  • Garnish:orange twist

Preparation

Combine all of the ingredients in an ice-filled mixing glass. Stir until chilled, strain over a large ice cube in a glass, and express with an orange peel. Garnish.
