King of Barbados, a Rum Cocktail for Fall

Calvados and allspice dram lend fruity spice to a base of rum, lemon, and honey.

For rum fans looking for a seasonal twist, this simple cocktail offers a rich depth of fruity spice.


  • 2 oz. rum (such as Mount Gay)
  • 1/2 oz. Calvados
  • 1/4 oz. St. Elizabeth Allspice Dram
  • 3/4 oz. fresh lemon juice
  • 3/4 oz. honey syrup (1:1)
  • Glass:coupe
  • Garnish:dehydrated lemon wheel (or fresh)


Shake all of the ingredients with ice, double strain into a coupe, then garnish.

Honey syrup: In a saucepan, combine 1 cup of honey with 1 cup of water. Bring it to a boil, then take off heat, and let cool.
