A boldly flavored sherry cobbler.

The Kind of Blue is Al Coro bar director Matt Reysen’s extra-summery take on a sherry cobbler. “I wanted to pair the bright and fresh flavors of blueberry with the balsamic vinegar we use at Al Coro that has flavors that resemble an oxidized sherry,” he says. Cappelletti Aperitivo gives it just the right amount of bitterness, while Amaro Pasubio introduces herbal notes and rounds out the blueberry flavors.

Ingredients

  • 1 1/2 oz. fino sherry (Al Coro uses El Maestro Sierra)
  • 1 oz. blueberry cordial
  • 3/4 oz. Cappelletti Aperitivo Specialino Rosso
  • 1/2 oz. gin (Al Coro uses Bombay Sapphire)
  • 1/2 oz. fresh lemon juice
  • 1/4 oz. Cappelletti Pasubio Vino Amaro
  • 1/2 tsp. balsamic vinegar
  • 3 dashes saline solution (1:10 salt to water)

  • Blueberry Cordial
  • 3 1/2 cups frozen blueberries
  • 2 cups sugar
  • 1 cup water
  • Tools:shaker, strainer
  • Glass:pilsner glass
  • Garnish:mint bouquet, fresh blueberries, blue flower

Preparation

In a shaker, add 1 or 2 ice cubes and shake until the ice is gone. This technique is known as the “Whip Shake.” Fill a pilsner glass with crushed ice, or any glass that can hold about 8 ounces of liquid volume, then pour the cocktail over the ice.

Blueberry CordialBlend blueberries and water in a a powerful blender. Add the sugar to the blueberry mixture, then stir to dissolve. Will keep in refrigerator for up to a month.
