Jungle Boogie: A Lighter Jungle Bird

In this tropical treat, JoJo’s Beloved Cocktail Lounge in Atlanta takes the classic Jungle Bird in a lighter direction. In addition to swapping out Campari with Luxardo Bianco Bitter, “our rendition relies on the traditional ratios, but substitutes Haitian clairin and Puerto Rican white rum in place of the usual blackstrap rum, lending brighter notes of grass and sugarcane,” says head bartender Qwesha Byrd.

Ingredients

  • 1 1/2 oz. fresh pineapple juice
  • 3/4 oz. Clairin (Byrd uses Le Rocher)
  • 3/4 oz. Puerto Rican white rum (Byrd uses Havana Club Añejo Blanco)
  • 1/2 oz. Luxardo Bianco Bitter
  • 1/2 oz. simple syrup (1:1)
  • 1/2 oz. fresh lime juice
  • Tools:shaker, cocktail strainer
  • Glass:double rocks glass
  • Garnish:pineapple fronds, dehydrated pineapple slice

Preparation

Combine all of the ingredients in a shaker with ice, shake vigorously for 5-7 seconds, then strain into a double rocks glass filled with ice cubes. Garnish.

Tip: If you can’t find clairin, substitute an unaged Haitian rhum such as Rhum Barbancourt White, or a rhum agricole from Martinique, such as Clement White.
