Jet Pilot Clarified Milk Punch

The Jet Pilot, a spiced-up version of Donn Beach’s Test Pilot, is one of the Commerce Inn team’s favorite classic tropical cocktails, and for their version, they transform it into a clarified milk punch.

Ingredients

Yield:4 cocktails
  • 4 oz. Goslings Black Seal Rum
  • 3 oz. Lemon Hart 151
  • 3 oz. gold rum
  • 2 oz. velvet falernum
  • 2 oz. fresh grapefruit juice
  • 2 oz. rich cinnamon syrup
  • 3 oz. fresh lime juice
  • 4 oz. cold whole milk
  • Tools:mixing glass, barspoon, strainer
  • Glass:Nick & Nora

Preparation

Combine all of the ingredients and then add the cold milk. Let the mixture sit for at least 2 hours or overnight in the refrigerator. Afterward, fine strain through mesh. Will keep in the refrigerator for a month. To serve, pour 3 1/2 oz. over ice in a mixing glass, then strain into a chilled glass.
Rich Cinnamon SyrupSlice 6 cinnamon sticks thinly lengthwise to expose more surface area for more flavor. Add 9 oz. of demerara sugar to 6 oz. of boiling water, stir, and allow the sugar to dissolve completely. Add the cinnamon, steep, and allow to cool. Once cool, strain out the cinnamon sticks. Will keep for about a month in the refrigerator.
