Hot Oaxacan Penicillin Cocktail

Combining ginger, honey, and scotch, Sam Ross’s Penicillin cocktail is a natural favorite for winter sipping. But looking to make an even more warming version of the modern classic, Resa Mueller at R&D in Philadelphia switches out the scotch with tequila and mezcal and turns up the heat for this Hot Oaxacan Penicillin. “The temperature brings all of the aromatics of the smoke, agave, and rich honey to your nose,” says Mueller.


  • 4 oz. hot water
  • 1 1/2 oz. reposado tequila
  • 1/2 oz. mezcal
  • 1/2 oz. ginger syrup (2:1 white sugar to ginger juice)
  • 1/4 oz. honey syrup (2:1)
  • Glass:tempered mug
  • Garnish:lemon wheel


Add the tequila, mezcal, ginger syrup, and honey syrup to a tempered mug and top with hot water. Garnish.
