Honeydew Mezcal Margarita

“There are too many mezcal cocktails that lean on pineapple,” claims Beau du Bois, Puesto’s vice president of bar and spirits. du Bois contends that the spirit works even better with the subtle, cooling notes of sweet melon, as highlighted in this mezcal margarita variation.

Ingredients

  • 2 1/4 oz. honeydew-infused mezcal
  • 1 oz. fresh lime juice
  • 1/2 oz. simple syrup
  • 1/4 oz. Italicus
  • 1/4 oz. Strega
  • Tools:shaker, strainer
  • Glass:rocks
  • Garnish:salt rim and thin melon slice

Preparation

Add all of the ingredients to a shaker with ice and shake. Strain into a salt-rimmed rocks glass over fresh ice. Garnish.

Honeydew-Infused MezcalRemove the skin and seeds from the honeydew, roughly chop, and add to a blender. Blend with 1 liter of mezcal slowly for 30 seconds, then blend on high for 1-2 minutes. Pass the infusion through a chinois or large fine strainer and store cold. Will keep for 1 month in the refrigerator.
