Hidden Leaf’s Sweet Milk Tablet Negroni

This unique take on the Negroni by Hidden Leaf bartender Iain Griffiths replicates the flavors of a popular Southeast Asian candy, sweet milk tablets. Here, passion fruit purée and milk imbue the drink with luscious flavors without further sweetening it. “The residual passion fruit notes and luxurious, velvety mouthfeel that remain hint at the Tablet candy flavor for an unforgettable, soft, and subtle take on a classic Negroni,” says Griffiths.

Ingredients

  • Tools:air-tight container, coffee filter
  • Glass:rocks

Preparation

Batch all ingredients together in a container (multiply measurements by the amount of Negronis you’re making). Let everything stand in the refrigerator for 24 hours. The acidity in the purée will split the milk. After 24 hours, pass everything through a coffee filter to strain until clear. Bottle and store cold. In a sterilized, air-tight container, it will last 6 months (possibly more) in the refrigerator. Pour 3 ounces over a large ice cube in a rocks glass and serve.
