Harry's Bellini Cocktail

A fresh approach to a summery brunch classic.

For their Bellini recipe, Judy and Harry’s in Asbury Park takes a different approach. “When conceptualizing the drink, we wanted to present the typical flavors of a Bellini in a more unconventional way—so we went Tiki,” says drink creator Ricardo Rodriguez. Here, mint freshens up the drink while the rye whiskey’s spice notes balance the sweetness of the peach.

Ingredients

  • 1 oz. rye whiskey
  • 1 oz. peach purée
  • 1/4 oz. peach liqueur
  • 1/4 oz. fresh lemon juice
  • 1/4 oz. simple syrup
  • 2 oz. Prosecco
  • Tools:swizzle stick
  • Glass:Collins
  • Garnish:mint sprig

Preparation

Add all of the ingredients except the Prosecco to a Collins glass, then swizzle, pack with pebble ice, top with Prosecco, and garnish.
