Frozen Banana Daiquiri

One of North America’s best bars transforms the Banana Daiquiri into a frozen delight. “There is nothing more refreshing and texturally satisfying than a perfectly blended Banana Daiquiri,” says Yacht Club co-owner McLain Hedges. “It’s very simple at the core, but the magic happens when it all comes together in perfect harmony.”

Ingredients

  • 1 oz. Smith & Cross rum
  • 1 oz. Wray & Nephew overproof rum
  • 2 oz. coconut cordial
  • 3/4 oz. fresh lime juice
  • 1/2 large overripe banana
  • 1 pinch of salt
  • 1 cup pebble ice
  • Tools:blender
  • Glass:tumbler
  • Garnish:toasted coconut, mint bouquet

Preparation

Add all of the ingredients to a blender and blend on high until smooth. It should have a silky-smooth consistency—not fully frozen and not runny. Pour into the glass and garnish.
Coconut CordialCombine 12 oz. of coconut milk (full-fat coconut milk, unsweetened) and 4 oz. of sugar and either blend on low until dissolved or shake until dissolved. The cordial should last in the refrigerator for about 10 days.
Tip“10-year Madeira is this drink’s best friend. I recommend leaving a little room for a float of Madeira to add a little extra complexity that complements the banana and rum perfectly,” says Hedges.
