Escape the heat with this tropical wine cooler.

Named after the main character in Marlon Brando’s movie Mutiny on the Bounty who convinced his crew to jump ship for Tahiti, this pineapple Madeira cocktail was designed for helping one endure the stickiest of summers. Fletcher’s Paradise, served over crushed ice as a nod to the Sherry Cobbler, is made with pineapple liqueur, cognac, and a touch of lemon.

Ingredients

  • 1 1/2 oz. madeira (Hatch uses Broadbent 5-year)
  • 1 oz. pineapple liqueur (Hatch uses Giffard Caribbean)
  • 1/2 oz. lemon juice
  • 1/2 oz. cognac (Hatch uses Pierre Ferrand Grand Ambre Cognac)
  • pinch of cardamom
  • Tools:cocktail shaker, strainer
  • Glass:julep tin
  • Garnish:dehydrated pineapple, mint, ground cardamom, 2 short straws

Preparation

Add ingredients to an ice-filled shaker, shake, and then strain into a julep tin. Top with crushed ice dome and ground cardamom. Garnish with dehydrated pineapple, mint, and straws.
