Some flavor combinations are natural matches, and Erick Castro, owner of San Diego’s Polite Provisions and Boilermaker in New York City, has a fondness for pairing Irish whiskey and coffee, which he combines in his Dublin Iced Coffee. “This drink is essentially a twist on the Irish Coffee, which is known and loved around the world,” says Castro, who retooled the drink using cold-brew coffee and stout beer for extra depth and flavor. “The drink works best with a coffee stout such as AleSmith Speedway, but Guinness works plenty well as a substitute.”


  • Tools:barspoon
  • Glass:footed pilsner
  • Garnish:freshly grated cinnamon


Fill a glass with ice and add all ingredients except the cream. Stir to combine. Slowly pour the cream on top of the drink and garnish.
