DIY Gløgg Concentrate

A prebatched recipe for the holiday season.

Why mix your holiday gløgg a la minute when you can prebatch a concentrate to use more than once? This concentrate from Emily Vikre of Vikre Distillery makes about a cup. “The amount of gløgg this can make varies because the whole point of the concentrate is that it allows you to sweeten your wine to taste,” she says. “But it should be enough for 2-3 bottles of wine, depending on your taste.”

Ingredients

Yield:1 cup
  • 1 cup sugar
  • 1 cup water
  • 1 tsp. cloves
  • 1 Tbsp. cardamom seeds
  • 2 cinnamon sticks
  • 1 inch fresh ginger, grated
  • peel of 1 lemon, peel removed with a vegetable peeler
  • 1 orange, cut in half
  • 1 tsp. citric acid (or juice of one lemon)
  • ¼ cup grape juice or apple juice concentrate (optional)
  • Tools:saucepan, spoon, fine mesh strainer

Preparation

Combine all the ingredients except the citric acid and grape/apple juice concentrate (if using) in a large saucepan. Bring to a simmer, stirring to dissolve the sugar. Cover and simmer for 20 minutes. Remove from the heat. Allow to cool to room temperature, then strain through a fine mesh strainer. Add the citric acid (or lemon juice) and juice concentrate (if using) to the syrup. Store in an airtight container in the fridge for up to two weeks. To use, warm up red wine, then stir in the gløgg concentrate to taste.
