A perfect sipper for chilly nights.

The holiday season is a nostalgia-filled time of year, and few foods summon memories of childhood more than graham crackers. In this low-proof holiday cocktail, graham crackers are infused into a blend of sherries, then the flavors are enhanced by the addition of bianco vermouth and a French herbal liqueur. “The De La Cruz is perfect for cold-weather sipping,” says Adam Chase, who co-created this cocktail for the Monarch Bar in Kansas City. “The cocoa bean and almond notes in the vermouth pair beautifully with the nutty cinnamon notes in the graham cracker sherry, while yellow Chartreuse adds complexity and a tiny kick of ABV that this cocktail needs to sing.”

Ingredients

  • 1 oz. bianco vermouth
  • 1 oz. graham cracker–infused sherry
  • 1/2 oz. yellow Chartreuse
  • Tools:barspoon, strainer
  • Glass:double rocks
  • Garnish:toasted marshmallow

Preparation

Stir all of the ingredients with ice, then strain into a glass over a single large ice cube. Add the garnish.

Graham Cracker–Infused SherryIn a jar, combine 400 ml of amontillado sherry with 100 ml of cream sherry (Monarch Bar uses Lustau for both), and add 1 whole cinnamon graham cracker. Let infuse for 30 minutes, then strain through cheesecloth or a coffee filter. Keeps refrigerated for up to 1 month.
