Constantine's Cosmo riff

A Cosmo with tang, texture, and floral notes.

This Cosmo riff by Keith Larry, head bartender of Brooklyn’s Little Rascal, swaps out the cranberry with a housemade raspberry-lychee purée for a bit of tang and texture and the Cointreau for St-Germain, rounding out the flavors with floral notes.

Ingredients

1 3/4 oz. vodka (Little Rascal uses Haku)
3/4 oz. elderflower liqueur
3/4 oz. raspberry-lychee purée
3/4 oz. fresh lemon juice

Tools:shaker, strainer, fine strainer
Glass:coupe
Garnish:dehydrated lemon wheel, mint

Preparation

Add all of the ingredients to a shaker with ice and shake vigorously. Double strain into a coupe, then garnish.

Raspberry-Lychee PuréeAdd 2 parts fresh raspberries, 1 part lychee, and 1 part granulated sugar to a blender. Blend until smooth. Will keep in the refrigerator for about a week.
