Chai Town: A Malört Cocktail

A bold Chicago-inspired sipper.

This cocktail from Lady Jane bartender Thomas Crawford stemmed from a dare. “The bar has a lot of friends from Chicago,” says general manager Stuart Weaver. “And Malört has always been a fun bottle to grab and chat with guests about. We took it as a challenge to make Malört taste good!” In the recipe, raisin and chai spice-infused bourbon and Licor 43 smooth out Malört’s bracing qualities. “Spicy masala chai and sweet, nutty golden raisin notes linger on the finish as Malört does what it does so well and doesn’t leave your taste buds alone until maybe you take a few sips of water,” Weaver says.

Ingredients

  • 1 1/4 oz. golden raisin and chai spice-infused bourbon
  • 3/4 oz. Cocchi Americano
  • 1/2 oz. Jeppson's Malört
  • 1/2 oz. Dolin Dry Vermouth
  • 1/4 oz. Licor 43

  • Golden Raisin and Chai Spice-Infused Bourbon
  • 750ml bourbon
  • 50g golden raisins
  • 30g fresh ginger
  • 15g cinnamon sticks
  • 5g star anise, whole
  • 3.5g black peppercorn, whole
  • 3.5g green cardamom pods, whole
  • Tools:mixing glass, barspoon, strainer
  • Glass:double Old Fashioned
  • Garnish:star anise

Preparation

Add all of the ingredients to a mixing glass with ice. Stir and strain over a large ice cube in a glass. Express orange peel across the top and discard. Garnish.

Golden Raisin and Chai Spice-Infused Bourbon Peel the ginger with a spoon and then chop into small pieces; chop the golden raisins; smash the spices into bits. Combine spice blend with bourbon in a sealable jar to infuse for 24 hours. Strain and store for up to 3 months.
