Carrot Juice Mocktail

A medley of citrus lends a juicy edge to fresh carrot juice in this recipe from Cristian Molina. “I wanted to make something that would make you feel better the next day, whether it be with herbs, fresh fruits or vegetables,” says Molina. Want to make a low-abv version? Add 1½ oz. of saké, and bring the carrot juice down to 2 oz. and the clementine to 1½ oz. for an appealing balance.

2½ oz. fresh carrot juice
2 oz. fresh clementine juice
¼ oz. fresh lime juice
¾ oz. ginger beer
4 leaves fresh Thai basil
Tools: shaker, strainer
Glass: rocks
Garnish: Thai basil leaf

In a mixing glass lightly muddle the basil, then add the carrot, lime and clementine juice, and shake with ice. After shaking, add the ginger beer and double strain into a rocks glass with fresh ice. Garnish.
