Caribbean Ember From Zasu New Orleans

Tyler Malone of Zasu New Orleans wanted to create a rum cocktail with depth and warmth, one that bridges the gap between Old Fashioned-style cocktails and tropical drinks—”two worlds that don’t often meet,” he says. He succeeded by matching rum with the spice of rye whiskey and the richness of dark maple syrup. “It’s a cocktail that feels both familiar and unexpected. Bold, layered, and easy to drink,” he says.

Ingredients

  • 1 1/2 oz. dark rum
  • 1/2 oz. rye whiskey
  • 1/2 oz. pineapple juice
  • 1/4 oz. dark maple syrup
  • 1/4 oz. fresh lime juice
  • 5 dashes Angostura bitters
  • ginger beer, to top
  • Tools:shaker, strainer
  • Glass:Collins
  • Garnish:mint bouquet

Preparation

Add the ingredients, except the ginger beer, with ice in a shaker. Shake and strain over fresh ice in a glass. Top with ginger beer. Garnish.
