Cantaloupe Mojito

Watermelon gets lots of love in summer cocktails, but Beau du Bois of Puesto in Southern California makes a case for the thirst-quenching power of cantaloupe. “With its subtle funk and naturally cooling notes, cantaloupe brings a refreshing twist to drinks like Mojitos,” he says, especially when paired with carbonation as in this Cantaloupe Mojito recipe.

Ingredients

  • 3 oz. cantaloupe rum
  • 3/4 oz. fresh lime juice
  • 3/4 oz. simple syrup (1:1)
  • 3 oz. club soda
  • Tools:shaker, strainer, fine-mesh strainer
  • Glass:Collins
  • Garnish:mint sprigs, 2 cantaloupe spears

Preparation

Fill a glass with ice and club soda. Add the rest of the ingredients to a shaker with ice and shake vigorously. Fine strain into the glass over the club soda. Garnish.
Cantaloupe RumAdd 1 cup of demerara rum, 1 cup blended white rum, and 3 1/2 cups to a blender and blend on high for 2 minutes. Then, strain through a coffee filter. Will keep in the refrigerator for a month.
