Calypso: A Tropical Port Cocktail

A vibrant combo that shows off the summery side of Port.

Named for the ship belonging to French ocean explorer Jacques Cousteau, this tropical port cocktail—combining rum from Barbados, tawny Port from Portugal, and bergamot liqueur from Italy—showcases the fortified wine’s summery side.

Ingredients

  • 1 1/2 oz. Barbados Rum (Armani/Ristorante 5th Avenue uses Mount Gay Eclipse)
  • 3/4 oz. tawny Port
  • 3/4 oz. pineapple juice
  • 3/4 oz. fresh lime juice
  • 1/2 oz. Italicus Rosolio di Bergamotto
  • 1/2 oz. simple syrup
  • Tools:shaker, strainer, fine strainer
  • Glass:rocks
  • Garnish:dried sage leaf

Preparation

Add all of the ingredients to a shaker, add ice, then shake vigorously. Double-strain into a rocks glass with a large cube, then garnish.
