Beach Cruiser From Bespoke Wilmington

Robby Dow of Bespoke in Wilmington, North Carolina, loves building on flavors in cocktails. For this tequila-mezcal cocktail, the spice of chile builds on the heat of ginger, while the bitter edge of Campari amplifies the hoppiness of IPA. “The layering of these provides some beautiful balance, topped off with a smoky pop from the mezcal and tart tropical notes from the passion fruit,” he says.

Ingredients

  • 1 oz. blanco tequila
  • 1/2 oz. mezcal
  • 1/2 oz. Campari
  • 1/2 oz. passion fruit syrup
  • 1/2 oz. ginger syrup
  • 1/2 oz. fresh lime juice
  • 1 dash Scrappy’s Fire Tincture
  • 1 to 1 1/2 oz. IPA
  • Tools:shaker, strainer
  • Glass:double rocks
  • Garnish:cucumber and cayenne

Preparation

Add all of the ingredients, except the IPA, to a shaker along with a handful of pebble ice. Whip shake. Pour into the glass over pebble ice and add IPA. Top with more pebble ice. Garnish.
Passion Fruit SyrupWhisk together 1 part passion fruit purée with 1 part rich simple syrup until well-combined. Bottle and refrigerate for use within 2 weeks.
Ginger SyrupBlend together 1 cup of fresh ginger juice with 1 cup of granulated sugar until dissolved. Bottle and refrigerate for use within 2 weeks.
