Aperitivo Sour Hudson Hill

A warm-weather winner.

Alex Lerman, director of operations and drink maker, wanted to create a bright, summery, low-proof cocktail with the feel and texture of a spirited drink. Enter this Aperitivo Sour, a twist on the Campari Sour. “Cappelletti is full of bright blood orange as well as many botanicals that you find in lots of vermouths, so it is a perfect ingredient to use to keep the recipe simple,” says Lerman. “Pair it with lemon and bitters to enhance that flavor and egg white to dry it out while creating a rich mouthfeel, and you have a winner for warm weather.”

Ingredients

  • 2 oz. Cappelletti Aperitivo
  • 1 oz. fresh lemon juice
  • 1/2 oz. rich cane syrup (2:1)
  • 1 fresh egg white (pasteurized if you like)
  • 1 dash Regan's orange bitters
  • Tools:shaker, strainer
  • Glass:coupe

Preparation

Combine all of the ingredients in a shaker without ice and shake vigorously. Add ice to  and shake again. Strain into a chilled coupe.
