Apapacho coffee cocktail

A simple twist on Irish Coffee.

This twist on classic Irish coffee from Rosewood Mayakoba’s Zapote Bar, one of the 50 Best Bars in North America, is just the thing for a chilly day. Apapacho, which translates to “a warm hug,” combines hot coffee with bourbon and vermouth rosso and is topped with freshly whipped cream.

Ingredients

  • 3/4 oz. bourbon
  • 1/4 oz. vermouth rosso
  • 1 oz. simple syrup
  • 1 1/2 oz. fresh-brewed coffee
  • 1 1/2 oz. whipping cream
  • Tools:mixing glass, strainer, shaker
  • Glass:coupe
  • Garnish:grated nutmeg

Preparation

Pour the first 4 ingredients into the glass and gently stir. Add the whipping cream to a shaker with an ice cube and shake very hard. Strain over the cocktail, then grate the nutmeg over the top.

Note: The bar mixes a bit of pinole with nutmeg (4:1) for the garnish, but nutmeg alone works fine if you don’t have pinole.
