A chocolate-covered strawberry Negroni.

This decadent chocolate-strawberry Negroni hails from Bar La Providencia in Santiago, Chile. Cacao-infused vermouth and strawberry-infused Campari balance out the classic bitter notes of the drink. At the Santiago bar, the drink arrives garnished with a housemade strawberry Campari gummy. But for home use, simply dust a strawberry gummy with cocoa powder.

Ingredients

  • 1 oz. gin
  • 1 oz. strawberry-infused Campari
  • 1 oz. cacao-infused rosso vermouth
  • Tools:mixing glass, barspoon, strainer
  • Glass:rocks
  • Garnish:cocoa-dusted strawberry gummy

Preparation

Add all of the ingredients to a mixing glass with ice. Stir to chill, then strain over a large ice cube into a glass. Garnish.

Strawberry-Infused CampariIn a glass jar, combine 1 cup of strawberries cut into small pieces and 750ml of Campari, close the jar and leave the mixture to macerate for 24 hours. Afterward, strain out the berries and re-bottle the mixture. It will keep for 30 days in the refrigerator.

Cocoa-Infused VermouthIn an airtight container add 1000ml of Rosso Cinzano vermouth and 1 cup of cacao nibs. Let macerate for 24 hours, then strain and bottle. Will keep for a month in a cool, dark place.
