Refuge's Alpha 60 rhum agricole cocktail

A delicately savory drink.

In this cocktail from Máté Hartai of Houston’s Refuge, sugar snap peas complement the grassy funkiness of rhum agricole. At Refuge, Hartai uses 1 oz. of Rhum JM and 1/2 oz. of Neisson Blanc, “combining both Rhum JM, a very robust and characteristic example of the category with Niesson, a funkier and more complex cousin.” Alternatively, you can use one bottle of rhum agricole for the full amount.

Ingredients

  • 1 1/2 oz. rhum agricole
  • 3/4 oz. sugar snap pea and white pepper syrup
  • 3/4 oz. fresh lemon juice

  • Sugar Snap Pea and White Pepper Syrup
  • 300g sugar snap peas
  • 10g white pepper
  • 600g water
  • 25g parsley
  • 650g granulated sugar
  • Tools:shaker, strainer, fine mesh strainer, blender
  • Glass:coupe
  • Garnish:snap pea and radish

Preparation

Add all of the ingredients to a shaker with ice. Shake to chill and strain into a coupe.

Sugar Snap Pea and White Pepper SyrupBlanche the snap peas and parsley for 30 seconds and chill them in an ice bath (best done separately). Add all of the ingredients, except the sugar, to a blender in proportionate amounts. Run on low for 20 seconds, then switch to high for 20 seconds. Fine strain twice through a large fine-mesh strainer, leaving the solids from the first filtering in to catch smaller particles of pepper. Add the sugar, then agitate until dissolved. Will keep in the refrigerator for 3 to 4 days. Store in freezer for extended periods.
