There aren’t many recipes that are as simple to make and as refreshing as a classic Caipirinha, Brazil’s national drink. At Analogue in New York City, they make a tried and true version. “Our Caipirinha recipe is a strict adherence to the classic recipe, because there’s not much you can do to perfection,” says co-owner Jard Gordon. “It’s sweet, tart, and evokes a warm beach with some salsa music in the background.”
1 lime, cut into quarters
1–2 tsp. superfine sugar (to taste)
2 oz. cachaça
Tools: muddler, shaker
In a shaker, muddle fresh limes with sugar. Add cachaça and ice cubes and shake vigorously (or build it in the glass and stir to chill). Pour, unstrained, into a chilled glass.
