Coconut water and gin might not seem like the most obvious pairing, but Hot Joy’s Lime in the Coconut cocktail isn’t your average highball. The gin’s botanicals and soft sweetness of the coconut marry seamlessly. Bar manager Elisabeth Forsythe says the roasted coconut water—which can be found in Mexican markets and specialty grocery stores—lends a rich, buttery flavor, but regular coconut water works fine.
1 ½ oz. gin
3 oz. roasted coconut water (or regular coconut water)
½ oz. fresh lime juice
½ oz. simple syrup
Tools: shaker, strainer
Garnish: lime wheel
Shake all ingredients with ice. Fine-strain into Collins glass with fresh ice. Garnish.
