Drink of the Week: Studio Null Sparkling Verdejo

Last week, I was cooking dinner for a few friends. When they arrived, I offered drinks. But it was a Tuesday and no one really felt like having alcohol. Luckily, I happened to have a bottle of the new Sparkling Verdejo from Studio Null in the fridge. Bright, bubbly, and crisp, the wine served as the perfect celebratory stand-in, sans alcohol.

As we explored earlier this year, the no-alcohol wine category is booming, with producers both domestic and abroad crafting a spectrum of styles. Studio Null, based in San Francisco and founded in 2021 by Catherine Diao and Dorothy Munholland, sources wines from smaller, European wineries before dealcoholizing them through a vacuum distilling process. For the Sparkling Verdejo, Studio Null sources a 2019 vintage of the single-varietal wine from the Diez Siglos winery in the Rueda region of Spain. The sparkling wine is crisp and dry, with lightly tart flavors of green apple and pleasant floral aromas—perfect for celebrating any night of the week. $36, nullwines.com
