Recently, on a particularly scorching late afternoon, I ventured to the kitchen for something cooling to drink. Torn between the refreshing factor of iced tea and the crisp complexity of a cocktail, I found the ideal flavor compromise in a batch of Sipsong Indira Tea that I had brewed the day before. Made in Sonoma County by Sipsong Spirits founder Tara Jasper, the Indira tea was created to mimic the flavors of her favorite spirit: Jasper’s flagship Indira Gin. Appreciators of the botanical spirit will recognize the flavors in this loose-leaf blend, with traditional ingredients like juniper, angelica root and cardamom complemented by Jasper’s more unique additions like hibiscus, lavender, and pink peppercorn. When steeped, the blush-colored tea is brightly bitter with a well-rounded herbal profile—perfect for pouring over ice.
