Drink of the Week: Prima Pavé Rosé Brut

On a recent Wednesday evening, I was cooking dinner for myself and a friend. I decided to pop open a wine that I thought would complement the meal. I pulled a bottle of Prima Pavé Rosé Brut from the fridge, imagining that a bright and bubbly rosé would pair perfectly with my pan-seared pork chops with spicy fig glaze. The wine didn’t disappoint, offering tart, juicy flavors of raspberry and red currant, with a dry, crisp finish. The only thing missing? Alcohol.

Prima Pavé Rosé Brut is an alcohol-free sparkling wine, one of three NA expressions from the company founded by Dejou and Marco Marano. Dejou began developing the idea while pregnant with her first child and in search of a festive, alcohol-free wine. The Maranos partnered with a winemaker in northern Italy to craft their wines, which are then brought to zero proof through a dealcoholization process. Prima Pavé is even popping up on notable wine lists at bars and restaurants along the East Coast, as proprietors are eager to offer more NA options. The Brut Rosé is made with a blend of Montepulciano d’Abruzzo, Pinot Grigio, Sauvignon Blanc, and Gewürztraminer.
